별주는 혜경궁 홍씨의 회갑잔치와 현륭원 참배에 필요한 음식을 준비하고 문서를 보관하던 곳이다. 1795년 혜경궁 홍씨의 회갑연 당시 정조와 혜경궁을 위한 음식은 별주와 비장청 주변의 임시 건물에서 준비하였고, 잔치에 참여한 내빈과 신하들의 음식은 서리청 주변과 별주의 서북쪽 공터에서 만들었다.

정조는 혜경궁 홍씨의 70세 고희연도 화성행궁에서 치를 생각이었기 때문에 회갑잔치 때 사용했던 그릇과 남은 비단 등을 창고에 보관하고 관리 문서를 별주에 비치하였다. 국왕이 화성행궁에 머물 시 예법에 맞게 수라를 올리는 규칙 문서 또한 별주에 보관하였다. 별주는 정조 사후에 현륭원과 건릉, 화령전 제향에 필요한 물품을 조달하는 관서인 분봉상시(分奉堂寺)로 바뀌었다.

Detached Kitchen

This detached kitchen was established in 1793 to accommodate the large-scale food preparations needed for the sixtieth birthday banquet of King Jeongjo’s mother Lady Hyegyeong in 1795 and for offerings made at the tomb of his father Crown Prince Sado.

Following Lady Hyegyeong’s banquet, the tableware, silk, and other goods were kept in a storehouse to use at her seventieth birthday banquet, while related documents were stored in the detached kitchen. However, upon the king’s untimely death in 1800, the detached kitchen was repurposed into a government office for the preparation of veneration rituals at Hwaryeongjeon Shrine and the tombs of Crown Prince Sado and King Jeongjo.

The detached kitchen was built anew in 2023 based on historical depictions of the kitchen that were verified through an excavation of the site conducted in 2019.
